SWEET POTATO, COCONUT & LEMONGRASS SOUP WITH CORIANDER SAMBAL

Ingredients
2 tbsp groundnut oil
4 spring onions, sliced
2 large garlic cloves, sliced
2 lemongrass stalks, chopped
Ginger, sliced
900g sweet potatoes, chopped
215ml coconut milk
285ml vegetable stock
1 green chilli
1 tsp caster sugar
2 limes, juiced
1 small pack coriander
Method
Cook spring onions, garlic, lemongrass, and ginger in oil. Add sweet potato, coconut milk, stock, and water. Simmer 25 mins.
Blend remaining ginger, chilli, sugar, lime juice, and coriander for sambal.
Blend soup, season with lime juice, salt, and pepper. Serve with sambal and coriander garnish.
