SWEET POTATO, COCONUT & LEMONGRASS SOUP WITH CORIANDER SAMBAL

  • Ingredients

    • 2 tbsp groundnut oil
    • 4 spring onions, sliced
    • 2 large garlic cloves, sliced
    • 2 lemongrass stalks, chopped
    • Ginger, sliced
    • 900g sweet potatoes, chopped
    • 215ml coconut milk
    • 285ml vegetable stock
    • 1 green chilli
    • 1 tsp caster sugar
    • 2 limes, juiced
    • 1 small pack coriander


    • Method

      • Cook spring onions, garlic, lemongrass, and ginger in oil. Add sweet potato, coconut milk, stock, and water. Simmer 25 mins.
      • Blend remaining ginger, chilli, sugar, lime juice, and coriander for sambal.
      • Blend soup, season with lime juice, salt, and pepper. Serve with sambal and coriander garnish.
