Ingredients
425g can lychees in syrup
2 stems lemongrass, bashed
85g golden caster sugar
2 cans mixed tropical fruit
100g seedless red grapes
6 macaroons or coconut biscuits
Method
Drain lychee syrup into a pan, add lemongrass and sugar. Dissolve sugar, boil 1 minute, then cool.
Strain syrup over lychees and other fruits. Chill. Serve with macaroons.
