TROPICAL FRUITS IN LEMONGRASS SYRUP

  • Ingredients

    • 425g can lychees in syrup
    • 2 stems lemongrass, bashed
    • 85g golden caster sugar
    • 2 cans mixed tropical fruit
    • 100g seedless red grapes
    • 6 macaroons or coconut biscuits


    • Method

      • Drain lychee syrup into a pan, add lemongrass and sugar. Dissolve sugar, boil 1 minute, then cool.
      • Strain syrup over lychees and other fruits. Chill. Serve with macaroons.
